Since the 1930’s the Kotis family has been involved in the restaurant business. Their first concept, Manuel’s, was a landmark fine dining restaurant located in the heart of downtown Greensboro.

Third generation restaurateur, Marty Kotis, started working in restaurants as a kid. During his career he has focused on restaurant investment, restaurant real estate development, shopping center development and restaurant brokerage.

In 2009, Kotis purchased the Darryl’s restaurant chain from Houlihans and launched a restaurant operations division. Darryl’s had been a flourishing operation for many of its forty years, but had become a tired brand, in need of updates, reinvestment and a massive overhaul of the concept in general. Kotis repositioned the brand, reinvented the concept while staying true to its core identity and successfully re-launched Darryl’s.

Kotis spent two years building the management team and infrastructure of the division. The company is now capitalizing on its real estate operations. It evaluates existing restaurant properties by determining 1) what niches of restaurants are underserved in the region, 2) the cost to convert the property to a particular concept and operational efficiencies, and 3) how successful that concept would be in that particular location.

The company then develops a concept through extensive research and testing, seeking out best practices from restaurants around the world. The objective is to be best of class in that particular niche.
